In Russia there is a huge selection of restaurants where along with local food always serves European dishes. Specialty restaurants are widely loved and popular in big cities: Italian bistro and pizzerias, Uzbek chaihona, Japanese and Chinese restaurants. In recent decades, more exotic restaurants of such countries like Thailand, India, Tibet began to appear.
Usually, Russian restaurants of the cities of the European part of our country there are widely presented both the dishes of traditional Russian cuisine, and the dishes of other nations inhabiting the territory of Russia: Ukrainian, Belarusian, Caucasian, Tatar.
Traditional Russian cuisine has absorbed in itself the elements of ancient Slavic cuisine, along with specialities and tastes of the various nationalities inhabiting the vast territory of Russia. Since ancient times on the wide plains of modern Russia the agriculture, gathering and hunting had been developed, but the grain (rye, barley, oats, millet and wheat) has always been a staple product. Because of this even today the bread remains the basis of Russian national cuisine.
A distinctive feature of Russian cuisine was that the food was cooked in the oven, so it is very widely used for broiling, braising, roasting and stewing. Also, Russian cuisine is characterized by harvesting vegetables and fruits for the winter by pickling and salting. The meat which was allowed for eating consisted of wild animals hunted for meat, and of livestock and poultry. Russia is a Northern country, so the food here is supposed to be quite filling and nutritious. Due to this, in Russia very many kinds of special dairy products have appeared, and meat of all kinds of livestock was allowed to use.

But same like in the other countries the entire culture and lifestyle, including the diet were influenced by religion. In Christian Russia, more than half of the days in a year were lean, when almost all categories of animal products are strictly prohibited. That is why there are lots of mushroom dishes, dishes of grain, vegetables, berries and herbs in Russian national cuisine.
